Our Favorite Summer Cocktails from The Cove at Pechanga Resort

With several upcoming holiday weekends on the horizon and summer around the corner, many of us will be spending more time poolside, at the beach and entertaining outdoors. If you’re looking for some fun and innovative summer cocktails that will “wow” your friends, The Cove at Pechanga Resort Casino has shared six amazing recipes that taste as good as they look!

Pechanga Resort Casino’s The Cove Pool Complex Reopens

From the Jalapeño Business to a Tequila Mai Oh Mai Tai, elevate your at-home entertaining with these fun summer cocktails from The Cove at Pechanga Resort. At The Cove, these drinks are 14oz and $14 each. The Cove guests can also purchase a 48oz.carafe of each signature cocktail for $50.

The Cove is currently open from 9am to 6pm. Hours will extend to 8am to 8pm beginning Memorial Day weekend through the rest of the season.

Jalapeño Business

Ingredients:

  • 1.5 oz. Silver Tequila

  • .5 oz Triple Sec

  • 1 oz Watermelon Puree

  • Sweet and Sour

  • Fresh Jalapeño (1 slice muddled)

Directions:

  • Add ice and all ingredients to tin and shake.

  • Strain and pour over ice.

  • Garnish with Lime and Jalapeño.

When Life Gives You Lemons

Ingredients:

  • 2 oz. Tito’s Vodka

  • 1 oz Blueberry Puree

  • 3/4 oz Lime Juice

  • Ginger Beer

Directions:

  • Build over ice (stir if needed).

  • Garnish with Lime.

Mint to Be

Ingredients:

  • 2 oz. Bacardi Silver Rum

  • Fresh Cucumber Pulp

  • .75 oz Lime Juice

  • .5 oz Simple Syrup

  • Fresh Mint (5 leaves)

  • Topped with Club Soda

Directions:

  • Muddle lime wedge and mint leaves in tin.

  • Add all ingredients except club soda and shake.

Time Flies When You’re Having Rum

Ingredients:

  • 1 oz. Malibu Coconut Rum

  • 1 oz Bacardi Silver Rum

  • Pineapple Puree (pineapple juice is fine, though drink won’t be as thick and will melt faster)

  • Handful of Ice

  • Whipped Cream (optional)

Directions:

  • Pour all ingredients in heavy duty blender.

  • Blend until ice is fully incorporated.

  • Top with whipped cream or a pineapple wedge.

Tequila Oh Mai Tai

Ingredients:

  • 1.5 oz. Reposado Tequila of your choice

  • .5 oz Meyers Dark Rum (acts as a floater)

  • .5 oz Orgeat Syrup

  • Equal parts orange and Pineapple Juices

  • Grenadine

Directions:

  • Add a healthy spritz of grenadine to the bottom of an ice-filled glass.

  • Add tequila and orgeat syrup.

  • Fill with orange and pineapple juices until nearly full. Stir.

  • Add floater of Myers rum and garnish with an orange wedge or wheel.

Mule of Thumb

Ingredients:

  • 2 oz. Tito’s Vodka

  • 1 oz Blueberry Puree

  • 3/4 oz Lime Juice

  • Ginger Beer

Directions:

  • Build over ice (stir if needed).

  • Garnish with lime.
